This really is something different: a beetroot with elongated roots that are more or less the same thickness along their length. Though they are fairly slow to fill out, the roots are a cook’s dream, producing uniform slices with almost the same diameter. This variety, like other beetroots, can be either sown directly into the ground or multi-seeded in modular trays and then transplanted. It is, however, not bolt-resistant, so put off sowing until the weather warms up in late spring and early summer.
