Cooking Tomatoes (paste)

Cooking tomatoes, or more correctly "paste tomatoes", produce fruit that have a very high dry matter and relatively little juice. This means they are the perfect choice for cooking because they produce less watery juice that then has to be boiled off, while having plenty of flesh that is packed with flavour.

Cooking tomatoes are not best eaten raw, as the high dry matter can make the flesh seem mealy.
