Description
Daucus carota
A main crop carrot with stunning purple roots that can grow to 20cm long.
Whether raw or cooked, they have a touch of sweetness and a pleasant mild ‘carrot’ taste. Unfortunately, the pigment leaches out of boiled roots, leaving them an unappetizing grey and the cooking liquid an unappealing blue. Used raw, however, they make an attractive addition to a crudité platter.
