Serrano chillies – a staple in Mexican cooking – have fruit that are slimmer and thinner fleshed than jalapeño chillies, another stalwart of ‘south-of-the-border’ cuisine. Like jalapeño chillies, serranos are traditionally used in the green stage, though will ripen to a red if allowed to mature.
The fruit of Hidalgo are typical serrano chillies; they measure about 5.5cm long and 1.5cm wide. The plants have a tidy growth habit and are about 55cm tall when grown in large pots. Like all serrano plants, the leaves and stems of Hidalgo have a covering of fine hairs. They are very productive, and will produce an abundance of fruit.
