Description
Phaseolus vulgaris
A purple-podded climbing French bean, with stems and flowers that are also purple. Valuable as an ornamental, Cosse Violette is also a good producer of flat, tender pods with an exceptional ‘beany’ flavour.
For the best eating, harvest the beans when they are about to 15 to 18cm long. When cooked, they lose their stunning purple colour and turn a dark green, though this in no way affects their quality.
